Up from the primordial depths of the mind comes an experiment in chaos and unpredictability...KEGS GONE WILD. Seemingly normal beers undergo a funk-tastic metamorphosis through the introduction of resident wild yeast. After six months or so these critters like Brettanomyces, Lactobacillus and pediococcis (found in the Lambic beers of Belgium)  break down the residual sugars remaining in the beer transforming them into "quelque chose" (pronounced kel ka show) or "something else".
